Roehill Springs Distillery was established in 2019 by husband and wife Duncan and Shirley Morrison on their family farm near the market town of Keith. Duncan also worked as a stillman for twelve years and gained a qualification in Distilling from the Institute of Brewing & Distilling.
A long held ambition to make their own gin, the couple purchased a thirty litre still and began developing recipes, slowly fine tuning what would eventually become their signature expression. The water for the distillation comes from a nearby natural spring, Roehill, named after the abundance of free roaming, wild roe deer, which can be seen early morning or late in the day grazing beside the spring.
A classic London Dry gin profile, Roehill Springs Distillery Gin No 5 is carefully distilled using local water and a curated selection of botanicals including juniper, coriander, angelica root, cassia bark, pink peppercorns and a selection of locally foraged botanicals, which are top secret. To taste, it’s described as classically juniper-led, followed by bold citrus and sweet floral notes to finish, rounded off with a beautiful, smooth mouth feel.
